I ran across a wonderful tip that I need to share and being the start of the school year it is at the perfect timing. I know a lot of you use those freezable blue ice packs but what happens if you don’t have one and you need to keep your child’s lunch cold for the afternoon?
-New kitchen sponge
—-Take your sponge and fill it with water. Once soaked, hold it up and let it drip out the excess water. (Don’t squeeze, just let it drip out) Once the sponge isn’t dripping much put it in the ziploc and seal and place in the freezer until frozen. When ready to pack the lunch just take the frozen sponge ziploc out of the freezer and it is ready to be used just like blue ice. As the water melts the sponge reabsorbs the water and no mess.

These were super good!! I like that they are baked instead of fried. I also used an organic ground beef instead of chicken. I made a yummy guacamole to dip with and a salad to make it into a dinner instead of an appetizer. Great idea and pretty easy to make. Everyone enjoyed them!!
This was super yummy!! The corn bread makes it. Everyone ate it up!! I liked the hot, cold mixture. My daughter didn’t like her salad with the hot and separated it. But she did like the dinner. One to try!!
Broccoli & Cauliflower Soup: Super good and healthy and everyone enjoyed it!!!!
2 cups Broccoli
2 cups Cauliflower
4 cups Chicken Broth
Boil all together until just tender. Then use an emulsion hand blender and blend until the texture you would like.
1/4 cup Cream Cheese
1/4 cup Cheddar Cheese
1/4 cup Half & Half
Pepper and Roasted Peppers to taste
Add to soup and blend further until it is just to your liking.
Heat until it is nice and hot and enjoy!!!!!
“Meatless Monday Quiche”
Ready made pie crust (Trader Joe’s)
1/2 cup Milk
2 cups Spinach (chopped)
1-2 Tomatoes (Chopped)
Black Olives (sliced, as many as you like)
1 cup Cheese (your choice, I used cheddar in this dish)
Salt & Pepper (your amount desired)
Non-stick spray for pie dish
Preheat oven to 350 degrees. Spray dish with non-stick spray. Prepare pie crust in dish, pre-bake for 5 min. (Just to heat) Whisk eggs, milk, and salt & pepper together. I then use 1/2 cup of the cheese, all spinach & tomatoes and lay them on the bottom, then pour the egg and milk mixture over the top and sprinkle the olives and the rest of the cheese on the top. Bake for about 40 minutes. (Check at 30 minutes). Should be golden on top and set. Quick, easy, & yummy recipe
