I made a crock pot full of Chili for my Husband. Chili is one of his favorites and I have never made it. Myself and my daughter do not like chili at all. It did make the whole house smell so good and my Husband is very happy. He said YUM!!!! My Mom likes Chili also so I am sending some home with her. My Husband will have lunch for the week.

I did a little substituting on this recipe. I used dijon mustard instead of dry mustard. No onion power. Added 1 tbsp worchestire sauce. This recipe was good and once it sat over night it tasted better. It was not the type of baked beans I was looking for though. I will stick to my Mom’s recipe which I love, just thought I would try another recipe.
My Daughter loves Macaroni Salad and one that is very simple. She loved this one we made on Memorial Day.
Dill Pickles-chopped-1 cup & pickle juice-about 3 tbsp
Mayo (Best Foods)-about 1 cup to your liking
Lemon Juice-1/2 lemon
Salt & Pepper
Mix all up and enjoy!!!
One of my Husbands favorites is Potato Salad. I never seem to make the same one over and they all have their different flavors. This one was real creamy and pickley (if that is a word?), which he prefers.
Russet Potatoes (6) boiled & skinned (Salt, Pepper, Lemon, & Garlic in the boiling water)
Sweet White Onion-1/2 – 3/4 of the onion, chopped.
Dill Pickles (4) chopped & about 3 tbsp pickle juice to taste.
Dijon-about 3-4 tbsp.
Mayo (Best Foods is all I use) -1 cup- I kind of eye it how creamy it is for the amount. We like it creamy.
Sweet Pickle Relish-3 tbsp.
Mix all ingredients and enjoy!!!!
The next day is always the best. The flavors soak all in.
My Daughter wanted to make a Red, White, and Blue Memorial Day Popsicle!!! So we brought out the Zoku Popsicle Maker. The Zoku Popsicle Maker is a blast and easy to use!! Holy Cow a popsicle in 7 minutes (exception: This layered one was 7 minutes each layer, because you had to wait for each layer to freeze) made with any juice you like!!!
Red Layer: Santa Cruz Organic Cherry Lemonade
White Layer: Santa Cruz Organic Lemonade
Blue Layer: Santa Cruz Organic Lemonade with Blue Food Coloring
Wait between each layer about 7-8 minutes.
My Daughter and I decided we would bake cupcakes decorated red, white, and blue for Memorial Day!!!!! Fun!!!
The frosting was great, my normal cream cheese frosting. But we all didn’t care for the cake recipe we used. It was too dense, not fluffy. Waaahhhh!!! But they sure did look cute and festive!!!!
1 cup unsalted butter (room temp)
1 block of cream cheese (room temp)
1 1/2 tsp of vanilla
1 cup powdered sugar (sifted)
Food coloring for color.
Cream the cream cheese then add butter and cream the mixture. Next vanilla and last the powdered sugar slowly. And mix till creamy. Add more powdered sugar if not thick enough and if too thick you can add a little milk.
Put in refrigerator til ready to use.
Independence Day Cupcakes:
1 cup sweet butter, softened
1 cup superfine sugar
2 cups self-rising flour
1 tsp. vanilla extract
Preheat oven 350 degrees. Use baking cups in muffin pan. Combine all ingredients in a large bowl and beat until smooth and pale, about 2-3 minutes. Spoon the batter into the cups and bake for 20 minutes. Remove from oven and cool for 5 minutes. Wait to frost until room temp.
Frost, decorate, and eat!!!!
These were so good!! Everyone liked them. A lot of fun to assemble. I added Sausage to the Ground Beef to give the meat more flavor. I also used Sharp Cheddar Cheese with the Mozzarella, added Spinach, Olives, Red Onion, and Shredded Carrots. I think when assembling a lasagna anything you would like to add usually works. Great also to put in the kids lunch the next day.
