Enchiladas

My Enchiladas!!  Everyone loved them.  I made my daughters without chili’s and she loved it!!  Chili’s too hot for her.  My husband said he could eat the whole dish!! Oh my!!!!

Ingredients:

Rotisserie Chicken (Shredded)

Corn

Green Chili’s

Monterey Jack Cheese, Goat Cheese, & Cheddar Cheese

Enchilada Sauce (Trader Joe’s) So Good!!!  (Pour a little on bottom of pan & more on the top of assembled enchiladas)

Corn Tortillas  (dipped in enchilada sauce)

Assemble enchiladas and then top with cheese and bake at 350 degrees for about 20-30 minutes.
