Made them again!!! I know I posted this recipe once already, but I need to implant it in your brains!!  YUM!!!!! You need to try it!!!





Pork Tenderloin Salad with Goat Cheese Dressing




Pork Tenderloin: Marinate in 1/2 cup soy sauce, 1/4 cup hoisin sauce,  a couple tsp’s rice vinegar, 1 tsp garlic power, 1 tsp honey.  Put fork holes in tenderloin. Bake at 350 degrees for about 40-50 minutes. Let rest after for about 10 minutes. Slice and top salad.


Spinach and Iceberg Lettuce

Broccoli Slaw (Trader Joe’s)

Black Olives

Tomato (2)

Cucumber (1/2)

Cheddar Cheese (1/2 cup)

Strawberries (1 cup)

Chives (1/4 cup)

Coarse Sea Salt & Pepper to taste.

Mix all together with pork tenderloin.


Organic Sour Cream (1 cup)

Mayo (1/4-1/2 cup) Best Foods

2 tbsp. Rice Vinegar

Coarse Sea Salt (to liking)

Pepper (to liking)

Basil (to liking)

Olive Oil (splash)

Goat Cheese (1/4 cup)

Mix all together and top salad.

Sausage Quiche


I Love Quiche!!!



Eggs (8)

Buttermilk (1 Cup)

Sausage Links Cooked (6 Crumbled)

Shredded Carrots (1/4 Cup)

Corn (1/4 Cup)

Fresh Spinach Leaves (10)

Parmesan & Cheddar Cheese (1 Cup)

Already Prepared Pie Crust (Trader Joe’s has a great one)

Grease pie dish. Fold out pie crust onto a pie dish.  Sprinkle parmesan cheese on the crust to make a layer. Whisk eggs, add buttermilk and put in cheddar cheese.  Pour on top of parmesan layered crust.  Top with sausage, carrots, corn, and spinach. Push down ingredients a little into the egg mixture.  Top with a sprinkle of parmesan cheese.

Bake at 375 degrees for about 40-45 minutes.

Pork Cutlets (Cutlet: salt, pepper, basil, lime. Sautéed with butter, about 3-4 minutes on each side on medium)

Iceberg & Spinach

Carrots (chopped)

Parmesan Cheese (1/2 cup)

Corn (1/2 cup)

Kidney Beans (1 cup)

Mandarin Oranges (1/2 cup)

Avocado (2)

Toss and enjoy!!!
