Pork Tenderloin Salad with Goat Cheese Dressing

Ingredients: 

Pork Tenderloin: Marinate in 1/2 cup soy sauce, 1/4 cup hoisin sauce,  a couple tsp’s rice vinegar, 1 tsp garlic power, 1 tsp honey.  Put fork holes in tenderloin. Bake at 350 degrees for about 40-50 minutes. Let rest after for about 10 minutes. Slice and top salad.

Salad:

Spinach and Iceberg Lettuce

Broccoli Slaw (Trader Joe’s)

Black Olives

Tomato (2)

Cucumber (1/2)

Cheddar Cheese (1/2 cup)

Strawberries (1 cup)

Chives (1/4 cup)

Coarse Sea Salt & Pepper to taste.

Mix all together with pork tenderloin.

Dressing:

Organic Sour Cream (1 cup)

Mayo (1/4-1/2 cup) Best Foods

2 tbsp. Rice Vinegar

Coarse Sea Salt (to liking)

Pepper (to liking)

Basil (to liking)

Olive Oil (splash)

Goat Cheese (1/4 cup)

Mix all together and top salad.
