Pancetta, Sausage, & Veggie Lasagna


Pancetta, Sausage, & Veggie Lasagna



1/2 cup Pancetta (Trader Joe’s) 

1/2- 1 cup Sausage

Saute Pancetta and Sausage together and set aside until you assemble the lasagna

1 cup chopped raw Spinach

1 Egg

1 cup Ricotta Cheese

1 tsp Basil

1 tsp Oregano

Combine Spinach, Egg, Ricotta Cheese, Basil, & Oregano and set aside until you assemble the lasagna

1/2 cup shredded Carrots

1-2 cups Marinara Sauce

1/4 cup Sliced Olives

2 cups shredded Mozzarella

Lasagna Noodles (Trader Joe’s No Bake) These are great!!! I like to dip the noodles in sauce and let the whole lasagna, after assembled to rest for about 30 minutes to absorb the liquid.

Layer all the ingredients and bake at 375 degrees for about 45 minutes.

Everyone loves the lasagna, how could you not!!!!!

Rosemary Ham and Swiss Cheese Croissants, were soooo good!! My Husband was craving them so I decided I would make our own!!  Everyone loved them.  Very good and sooo easy!!

Lay out, roll up, and bake as directed.   ENJOY!!!

Chinese Noodles with Sesame Dressing

This was really good!!!  Thought I had sesame oil but didn’t so I used oil and sesame seeds instead.  The sesame oil would of made the flavor better I think.  But used what I had and it turned out really good.  I would of used a little less lime juice but it could of been too limey since I didn’t have the sesame oil. Even better the next day once everything soaked in. 

Peanut Cole Slaw


Love a sweet and tangy coleslaw and the peanuts give it a good crunch!!!  




Green Cabbage (Bag at Trader Joe’s, already shredded)

Green onions (1/4 cup)

Carrots (shredded, 1/4 cup)

Peanuts (roasted & salted, 1/2 cup or more, up to you)

Vegetable Oil (enough to make moist)

Red Wine Vinegar (about 1/4-1/2 cup, depends on how tangy you like it)

Rice Vinegar (splash)

Salt & Pepper (your taste)

Sugar (1 to 1 1/2 tbsp., to taste)

Mix and enjoy!!!


Sweet and Sour Chicken

My Husband and I enjoyed this but my Daughter doesn’t care too much for Sweet and Sour Chicken. It takes a little bit of time to prepare and I got a little concerned when you dip the chicken in the corn starch, then in the egg and then in a pan to brown.  The egg on the outside started to look like an omelet.  Don’t worry because then it all comes together and works.  Make sure you brown the chicken.  I am still trying to find that crunchy Chinese style Sweet and Sour Chicken. You know the kind you order at the Chinese Restaurant?

I renamed “Berry Crumble” because I used a mixture of berries instead of just blackberries.  I also topped with coconut. Very yummy recipe and super easy!!! We all loved this except my daughter who is not a big fan of crumbles. And she was quite happy making her own “Snickerdoodle Ice Cream Sandwich,” which is also located in my Blog. In the mood for a last minute comforting dessert definitely try this recipe!!! Top with vanilla ice cream, and ahhhh so GOOD!!!!
