Spinach Tortellini Soup



Everyone loved this and super easy!!!


2 packages Trader Joe’s Spinach Tortellini (In the refrigerator section)

2-32 oz. cartons of Organic Chicken Broth (Trader Joe’s)

Fresh Spinach-2 handfulls

Carrots-3 sliced

Sun-dried Tomatoes-8 pieces

2-Cloves Garlic chopped

2-Tsp. Olive Oil

2-cups water


Sautee garlic in olive oil in a large pot until golden.  Add water and broth and bring to a boil. Add tortellini, sun-dried tomatoes, and carrots and cook to pasta directions. During the last minute of cooking add spinach & pepper, cook until wilted and serve in bowls.
