Overnight French Toast

This was sooooo good!! And so easy to make!!  Here is the recipe:

Arrange 12 slices French or Challah bread in a buttered 9 by 13 in. baking dish.  In a large bowl. beat 6 eggs. 1 1/4 cups milk, 1/4 cup half and half, 1/4 cup sugar, 2 tbsp maple syrup, 1 1/2 tsp vanilla extract. and 1/4 tsp salt.  Pour over bread.  Refrigerate, covered, overnight.  Turn slices over once or twice to be sure they’re evenly coated with egg mixture.  In the morning, bake in a preheated oven at 400 degrees for 15 minutes.   Turn over and bake for 20 minutes more or until golden brown.  Pop under broiler to brown, if desired.  Dust with confectioners’ sugar.  Serve with fresh fruit or maple syrup.  I also drizzle with boysenberry preserves.  Enjoy!!

Coconut Shrimp

This turned out pretty good and light.  Your hands get really dirty preparing.  Here is the recipe.

Ingredients:

Nonstick cooking spray

6 tbsp flaked unsweetened coconut

1/4 cup panko

2 tbsp all-purpose flour

1/2 tsp salt

4 large egg whites

24 medium shrimp peeled with tales left on, deveined, butterflied, and patted dry

Procedure:

1.) Preheat oven to 450 degrees.  Spray baking sheet with nonstick spray.

2.)  Combine coconut, panko, flour and salt on piece of wax paper.  Beat egg whites in large bowl until frothy: add shrimp to egg whites and toss to coat.  Lift shrimp from egg whites one at a time, letting excess drip back into bowl: coat with coconut mixture, pressing gently to help it adhere. Place shrimp in single layer on baking sheet. Spray shrimp lightly with nonstick spray.  Bake until golden outside and opaque inside, 8-10 minutes.

This soup was really good and super easy to make!!  I love making soups because I can use my immersion blender, it is so fun!!  Also, now since I have my immersion blender I try not to buy soup at the store and it is so much healthier for you when you make it yourself.   It looks like I used a crock pot to make it but I didn’t, I just used it to transport and keep warm.  It stayed really well.
